Spanish Rice

This is a recipe that everyone in my family uses. My mom made it for us when we were teenagers, I make it for my family and it’s one of the first meals I taught my son how to make. It’s cheap, easy and I almost always have these ingredients on hand. It’s one of those meals you can make in a skillet and let everyone help themselves to as they get home. It stays warm on low for hours! It’s one of those good caserole type meals you can take to a potluck too. The leftovers are good warmed up in the microwave too!

Ingredients:

1 lb hamburger 1 can diced tomatoes 1 cup rice 1 package chilli seasoning 1 bell pepper, chopped 1 small onion, chopped garlic salt taste pepper to taste chilli powder to taste

Brown hamburger and onion in a large skillet or electric skillet. Add a dash of garlic salt and pepper, depending on your taste. We like a LOT of garlic in our house! Drain hamburger and add all other ingredients. We add a tablespoon of extra chilli powder to give it that extra ZING. Add the 3 spices to your taste. Cover with water, about 3 1/2 to 4 cups. Cover and simmer 30 minutes, stirring occassionally. Uncover after 30 minutes and let simmer uncovered for 15 minutes. Serve with bread and butter!
