Muffins Muffins Muffins!
It’s been chilly lately and what makes you feel all warm inside better than a comfort food! Hot chocolate, hot tea, fresh hot muffins from the oven! Yesterday when Tyler got home from school I made a quick half dozen blueberry muffins. This morning in the chill I made some hot strawberry cheesecake muffins while I moved around wrapped in my blankie. Neither baking spree took more than 20 minutes and 17 of those minutes was the baking time. For 3 minutes worth of effort and maybe $1.30 I have a dozen sinfully tasting muffins and my house smells awesome! Tyler and his friend munched down on fresh blueberry muffins after school, loved it, and had a healthy snack instead of chips or cookies. What more can you ask for?
For both types of muffins I used those super easy, tear the top off bags of premixed muffin batter. All I did was add milk or water, preheat the oven, pour into muffin cups, bake em and eat em. The first was a Betty Crocker blend that I just added water to. The strawberry cheesecake mix was Martha White brand. Each cost around 65-70 cents.
For such a low cost I’m definitely buying more. I love having healthy, fresh baked snacks to offer the kids after school but I also like being lazy. This lets me have my muffin and eat it too!
